Es gibt im Médoc keine berühmtere Appellation als die AC Pauillac. Neben 15 klassifizierten Gütern (u.a Château Pontet Canet, Pedesclaux oder Pichon Baron), sind drei der fünf Erstgewächse (Premier Grand Cru Classés) des Jahres 1855 (Château Mouton-Rotschild, Château Lafite Rotschild und Château Latour) in Pauillac beheimatet.
Die Weine aus Pauillac sind körperreich mit einem markanten Bukett mit Noten von schwarzen Johannisbeeren und Zedernholz und haben eine sehr hohe Lagerfähigkeit.
